How a charcoal grill on a Philipsburg street corner became one of the island's most loved gathering places.

Uncle Bob's Restaurant began in earnest in 2017, just two days after Hurricane Irma passed through St. Maarten.

In the aftermath of the storm, the island was practically paralyzed. There was devastation everywhere, and many people were simply trying to get through the day. Out of that difficult moment, something meaningful began to take shape.

With a grill set up on the sidewalk outside our current location on E.C. Richardson Street #20, Philipsburg, Sint Maarten — near the police station — Uncle Bob started grilling barbecue ribs and chicken legs. At first, the meals were given away. Emergency personnel, neighbors, workers, and anyone passing by could stop for a hot meal during a time when hot food was hard to come by.

Before Uncle Bob's became known as a restaurant, Uncle Bob was a baker. Because of that, he was already prepared with a generator, a stove, and a full stock of goods. What had once been part of a bakery operation became a lifeline in the days after the hurricane. That small sidewalk grill, powered by determination and a desire to help, slowly became something bigger.

What started with chicken legs and spare ribs soon grew into rice and peas, pork chops, salads, and whatever people asked for. The goal was simple: serve good food, treat people well, and keep prices friendly. That same spirit continues today.

Uncle Bob's has become a place where St. Maarten meets. It is casual, homey, and welcoming — the kind of place where guests come for a meal and leave feeling like family. Many are surprised by the quality of the food, the generous portions, and the friendly service, but for us, that is simply how it should be.

Everything at Uncle Bob's is cooked with love. Every guest is treated like family. And every plate carries the same heart that started it all just two days after Hurricane Irma.
